As a mom, I have come to live by the slow cooker. We eat meals out of the slow cooker about twice a month at least. Breakfast is no exception. I make this slow cooker breakfast casserole for a lot of the breakfast or brunch gathering that we have at our house.
Quick Tip – If you are planning a family get together and want to have more healthy options, suggest breakfast or brunch. There are way more healthy options that everyone likes! Think about it – greek yogurt and fruit, egg white omelette, turkey sausage or bacon. Steer clear of the baked goods and you’re in good shape!
I made this using the standard 6 quart slow cooker that has a convenient keep warm setting. When the set time is up, it automatically switches to keep warm. This comes in handy with these 6 hour recipes that don’t get you through a full workday or good night’s sleep.
I came up with this recipe after a couple years of making crustless quiche for breakfasts. It’s basically everything you would put into a quiche without the crust. I like to prepare this the night before I serve it and throw it on right before bed. The relief of having one less thing to think about in the morning is awesome.
If you don’t have 8 people to serve, these do freeze well. Simply cut them into individual servings. Then, wrap them in plastic wrap and then put them in a big ziplock back for future use.
