Mini Turkey Meatloaves make a for great week night dinner. By dividing what is normally a very large piece of meat into 12 smaller pieces, you get a much shorter cook time. I made these with some amazing roasted fall vegetables all in the same oven with the same cook time.
Mini Turkey Meatloaves, Lightened Up
I must confess, I stole this brilliant idea of dividing the loaf into 12 from Betty Crocker and cannot claim it for myself. However, I did some tweaking to the BC recipe. I made these swaps to bring the calories for 2 mini loaves down by about 33%:
1. Leaner Meat
I made the first obvious move of switching 80/20 ground beef for 93/7 ground turkey. Making this trade cut down the fat a ton.
2. More Real Ingredients
I wanted to have the same sweet and tangy flavor, but with fewer processed ingredients. So Ketchup and sugar were exchanged for tomato paste, balsamic vinegar and real maple syrup.
3. A Little Extra Protein, for the Win
This is not necessary, but it’s an ingredient I keep in the house as a staple: swapping Kodiak Powercake Flapjack and Waffle Mix in for Bisquick. If you have Bisquick, use it, but know your macros will change.
