Potato salad is a must for that backyard barbecue. The cup or two of mayo in your typical recipe makes it tough to justify a big helping on your plate, though. I wanted to make a slightly creamy version that was low in fat and still had great flavor. This salad can be served warm or cold and has a smokey and slightly sweet flavor that I love! I serve it with my Jalapeño Turkey Burger for the perfect backyard summer meal.
Ditching the Fat
Don’t get me wrong, I have no problem with fats, healthy fats. The problem with potato salad, though, is that it’s already loaded with calories from carbs. To make it lower in calorie, we lost the fat and kept the carbs. Here’s how I did it:
- I used a small amount of fat free sour cream and honey dijon mustard instead of a large amount of mayo
- I boosted the flavor even more with red pepper and bacon
