There are not many things better than some southern comfort food. Chicken and waffles is one of my favorite dishes, but it usually comes with a bit of a splurge because of the fat and carb content. This version gives you a little touch of the south with an extra helping of protein and very little fat.
Keeping it Sweet
Chicken and waffles are generally prepared with either sweet or savory flavor profiles. This recipe definitely leans more toward sweet with the addition of the sweet potato. The chicken is also seasoned with sweet and savory flavors.
How to Skinny It
This chicken is not battered and fried, in an effort to save both calories and time. Instead, I opted to add sweet and spicy seasonings and grill the chicken. This removed a ton of fat and carbs, prep time, and clean up…that is three wins in my kitchen. I think it’s also a fair trade off for the crunch of the fried chicken, but that’s a matter of opinion.
