Grilled Vegetable Salad is one of my favorite summer recipes. It’s one that I bring to potlucks often (the serving size is adjustable in the recipe below). This salad is not only an easy grilling recipe, but is crazy delicious. Additionally, you can switch it up based on what vegetable are in season or on sale. There are only a couple rules to making a great combination.
First of all, try to get at least 4 colors in the salad, but mix it up every time. Next, don’t hesitate to consider fruits on the grill as well. Grilled peaches, mangos and pineapple are some summer must haves! Lastly, there are a few on the list below that are post-grill add-ins for extra flavor, color or texture. Because the grill is typically outside, I know the typical grilling season is in the warmer months, right? Well I highly recommend investing in a grill pan or an electric grill/griddle combo. - Serve this salad up with your favorite grilled meats
- Toss with your favorite sauce – pesto is a great low carb option.
- Fold in some extra carbs if you have the room in your macros – pasta, couscous, quinoa or rice.
