I have possibly the world’s pickiest toddler (seriously, pancakes are a struggle, you can imagine my horror). He eats this bread for dessert like I eat pancakes for breakfast.
How and Why Zucchini Bread is Awesome
I actually stumbled upon this recipe on Betty Crocker. Only a few ingredient changes were made to lower the calories a touch, get rid of the hydrogenated oil and add like a gram of protein. I know, a gram doesn’t sound like much, but sometimes it is!
Zucchini adds volume and moisture to this bread just like banana do to banana bread (with WAY fewer carbs). Also similar to bananas, the zucchini adds potassium and vitamin A to your micronutrients for the day. So eat some cake to get your micros in, okay?
Fantastic all by itself as a snack.
This “bread” is pretty much cake, so duh. Spread all the things on this to make it more delicious: honey pecan cream cheese, honey, sugar free maple syrup, peanut butter…
This makes for a great substitute for regular toast. Even better, coat the slices in egg whites and make some french toast!
