f you follow me on Instagram, you know I love my Macro Bowls! The Baja Macro Bowl recipe is a fresh and easily customizable. It was born from a love of fish tacos and chipotle bowls. Fish tacos are amazing, but generally don’t come with a lot of volume per serving. Chipotle is an IIFYM staple, but it has its limitations (ahem – 40g carbs in one scoop of rice!).
What Is a Macro Bowl?
A macro bowl is just that, a bowl full of different items that are classified as one macro or another. Let’s use the delicious Baja Bowl as an example: tilapia = protein, avocado = fat, rice = carb. I love them because it’s easy to piece together a meal that fits your macros perfectly!
Enter the Baja Fish Bowl – Why We Love It
- Assuming you already have cooked rice in the fridge (you should ALWAYS have some pre-cooked on hand), this recipe takes all of 12 minutes to put together.
- It is highly customizable, just like the beloved Chipotle Bowl. Short on carbs? Replace the rice or mango with a ton of shredded lettuce. Need more fat? Increase avocado or drizzle with Sriracha mayo or coconut oil. More protein? Add additional fish or scrambled egg whites. Mangos are out of season? Go for pineapple! This possibilities are endless.
- I like white fish for this recipe because the texture is great, it cooks quickly and it is inexpensive. I chose cod, but tilapia works great too.
