As the weather warms, I immediately begin to crave all things grilled. What springs to mind when you think of grilling food? Burgers! The bacon jalapeño turkey burger is spicy, smokey and filling.
Because the recipe calls for lean turkey, I had a opportunity to add one of my favorite things ever: bacon. The flavor is like none other. Another magical summer flavor is jalapeño. One of my favorite summer appetizers is jalapeño poppers, which is essentially where I got the idea for this recipe.
Tips for a Better Turkey Burger
This is a great make-ahead recipe, in fact, I recommend it. There is nothing more obnoxious than your burgers falling apart on the grill. Then there’s always the poor burgers shrinking on you and looking just pitiful on the bun. Below are some tips to avoid these catastrophes.
1. Get a Burger Press
Making burger patties has always been a pain to me, so I started only buying the pre-made patties at the store. Here’s why that option is a bummer: no control over the seasonings or cut of meat. Again I say, get a burger press! This is the one I use:
If you don’t feel like springing for the press, you can always use a large lid to get a uniform shape for your patties.
2. Freeze The Patties
Freezing the patties before you cook them avoids both the shrinking phenomenon and the falling apart debacle. So you have the whole two birds, one stone thing going on here. I suggest making the patties the night before and throwing them in the freezer. The next morning, pull the patties out and cook them for lunch or dinner. The idea is to put them on the grill in a partially frozen state.
I know you would think this would lead to uneven cooking, but it actually makes for a really juicy burger. This is something I figured out a while back after eating yet another burger that seemed to be made of leather.
3. Plastic Wrap to Avoid Mess
Place a small sheet of plastic wrap in the base of the burger press. Before you actually press it, loosely fold the plastic wrap over top of the patty and then press. This avoids mess and makes the freezing process easier.
