Autumn Chicken and Tortellini Salad is one of the most flavorful salads I’ve ever made. The maple balsamic dressing pairs perfect with the sweetness of the butternut squash. The pine nuts and bacon add a smokey flavor that puts it over the top.

In a world where low carb diets are being put on a pedestal, let me put you at ease. Here are 3 primary ideas I want to sink in when it comes to all the carbs:

Stuffed pastas are typically something I don’t do often. They are calorie dense for a small portion and aren’t spilling over in fiber. However, using a smaller portion, say half a serving, is still filling when you use a bunch of veggies and protein to fill up the rest of your bowl. Ahem..see recipe below.
2. Carbs are Delicious
Including items that you enjoy in your diet will strengthen your relationship with food. If you live in a constant state of excluding foods you love, you’re only setting yourself up for the proverbial yo-yo cycle of dieting. Learn how to incorporate healthier version of these foods on a semi-regular basis. That way you’re eliminating the temptation to go bananas and get a huge plate of tortellini Alfredo on your next trip to the Olive Garden…I’ll spare you the calorie comparison.
3. Energy is Good
At the end of the day, carbs provide you with energy and can optimize your training results. I encourage you to find a happy medium where you aren’t overeating processed carbohydrates, are reaching your desired health goals, and have optimal amounts of energy.
